Chickpea properties: chickpeas, one of the oldest seeds in human history, are the third most widespread legume in the world after beans and soy. With chickpeas you can cook many healthy dishes such as chickpea cream. Since they do not contain gluten, it can be considered a particularly suitable food for celiacs.

Chickpeas contain 10.6% water, 19.3% protein, 17.5% dietary fiber, 2% ash, 6% fat and carbohydrates; among the minerals we find: potassium, calcium, phosphorus and magnesium, sodium, iron, zinc, copper, manganese and selenium. Among the vitamins we find B1, B2, B3, B5, and B6, folate, vitamin C, K and J and finally vitamin E. There is a fair amount of amino acids such as aspartic acid, glutamic acid, leucine, lysine, phenylalanine, arginine, serine, valine and isoleucine.

Dried chickpeas have a rather long preparation time: it takes from 12 to 18 of pre-cooking soaking. After soaking, they should preferably be cooked in an earthenware pan for three hours over low heat in cold water and with a lid: cooking begins when the water boils. After soaking and cooking, the chickpeas double in volume.

  • According to experts, chickpeas have the ability to lower the levels of "bad cholesterol" in the blood, thus playing a protective role against the heart: the reasons are due to the presence of magnesium and folate in the legume; the latter in fact appears to be able to lower the levels of homocysteine, an amino acid that increases the possibility of heart attack and stroke when it is present in excessive quantities in the blood.
  • The high presence of magnesium would benefit blood circulation and thanks to the presence of Omega 3 it would be able to prevent states of depression and lower triglycerides, thus avoiding the onset of heart arrhythmias.
  • The dietary fibers present in chickpeas would have the ability to regulate the functions of our intestine and at the same time would help keep blood glucose levels balanced.

Chickpeas, contraindications: since they contain cellulose, chickpeas may be a bit difficult to digest, therefore it is preferable to consume them in moderation, especially if you suffer from colitis.
